Shrimp and Mushroom Spicy Soup
Ingredients
- 1 Tbsp. Canola oil
- ½ White onion, chopped
- 3 garlic cloves, chopped
- 2 cups of fresh mushrooms, chopped
- 5 guajillo peppers, seeded
- 1 ½ qts of fat-free chicken broth
- 2 sprigs of parsley
- 1 lb. fresh shrimp
- 1 Tbsp. sour cream (optional)
- Salt and pepper to taste
Instructions
Step 1
In a soup pot sauté the mushrooms.
Step 2
In a separate pot, boil the peppers, onion, garlic and in about two cups of water until soft, blend them with a little bit of the water you used to boil them. Strain the mix and add it to the soup pot.
Step 3
Add the chicken broth, parsley, shrimp, sour cream, salt and pepper and boil until shrimp change color.
