Shrimp and Mushroom Spicy Soup


  • 1 Tbsp. Canola oil
  • ½ White onion, chopped
  • 3 garlic cloves, chopped
  • 2 cups of fresh mushrooms, chopped
  • 5 guajillo peppers, seeded
  • 1 ½  qts of fat-free chicken broth
  • 2 sprigs of parsley
  • 1 lb. fresh shrimp
  • 1 Tbsp. sour cream (optional)
  • Salt and pepper to taste


Step 1

In a soup pot sauté the mushrooms.

Step 2

In a separate pot, boil the peppers, onion, garlic and in about two cups of water until soft, blend them with a little bit of the water you used to boil them. Strain the mix and add it to the soup pot.

Step 3

Add the chicken broth, parsley, shrimp, sour cream, salt and pepper and boil until shrimp change color.
