Black Bean Soup


To cook the beans:
  • 1lb. (454 gr.) Uncooked black beans, cleaned and washed.
  • ¼ large white onion.
  • 2 cloves garlic.
  • 1 tsp of salt.
  • 1½ liters water
Tomato Sauce
  • 3 tomatoes
  • 2 cups chicken broth.
  • ¼ Large white onion.
  • 1 clove garlic.
  • 2 bay leaves.
  • ½ tsp. cumin.
  • 1 pinch of thyme.
  • ½ tsp mustard.


Step 1

In a pot bring water to a boil. Add beans, ¼ onion, 2 cloves of garlic and 1 tsp. of salt. Cook for 20 minutes or until beans are tender.

Step 2

Apart in a blender, blend tomatoes, chicken broth, ¼ onion and 1 garlic clove. Strain and pour into another pot, add the bay leaves and cumin and let boil for two minutes.

Step 3

Blend the cooked beans and pour into the pot of boiling tomato sauce. Boil for another 10 minutes over low heat. Serve warm with a little fresh pico de gallo or cheese to garnish (optional).
